What's the best way to acoustically-insulate party walls in a C19th semi - including chimnies?

I'm about to renovate a semi-detached C19th canal-worker's cottage, and am concerned about high levels of sound transmission through the party wall. I'm aware of acoustic insulation products, but am most concerned about what to do about sound coming through chimney breasts, none of which will be active in either my house or next door. Any suggestions gratefully received.
